A unique take on hummus.  The use of Edamame gives this
dish a uniquely asian flavour which is perfect
for serving on rice crackers, using as a sandwich spread,
or as a toping for sliced vegetables.
As always, try it once, then experiment and come up with
your own crazy ways of eating and making edamame hummus.

  • Serving: 2 cups
  • Cooking Time: 5 minutes

Ingredients:

2 C edamame, thawed and de-shelled
2 green onion, roughly chopped
2 garlic cloves
1/2 C fresh cilantro, coarsely chopped
1/4 tsp red pepper flakes
1/4 tsp coriander
2 tbsp tahini
1 tsp honey
2 tbsp lime juice
2 tbsp olive oil
2 tbsp water
salt & pepper to taste
sesame seeds for garnish (optional)

Directions:

  1. Place all ingredients in a food processor and blend on high speed until smooth

Place all ingredients in a food processor, or high-powered blender such as a Vitamix or Blend-Tec. Process on high speed until smooth. Serve on rice crackers, as a sandwich spread, vegetable dip, or as a topping for sliced vegetables. Makes a little over 2 cups
