This tasty breakfast staple is wheat, gluten and lactose free.  While not as sweet as a typical waffle, these squares of goodness go great with fresh fruit, honey or maple syrup.

3 Eggs
1 tbsp coconut oil, melted (or substitute with olive oil)
1/4 C no-sugar-added store-bought applesauce
1 C egg whites
1/3 C unsweetened full fat coconut milk
2 tsp vanilla
1 tbsp honey
dash of cinnamon and nutmeg
1/4 tsp sea salt
1 tsp baking soda
1/2 cup coconut flour, sifted


  1. In your favourite mixer, combine  until all ingredients are mixed well, approximately 30 seconds
  2. Cook following your waffle iron instructions
