couscous salad with orange dressingThis delicious cold salad is delicious on its own as a lunch or late night snack.  It can also be accompany Moroccan chicken or a lamb stew.  Remember, always use fresh herbs.  They will make a As with all my recipes, try them once, then experiment and make it your own delicious couscous salad.

• Servings: 1.4 kg (3 lbs) Ingredients: 180 g (6 oz) Couscous 1 Red bell pepper, medium dice 1 Green bell pepper, medium dice 1 bunch Green onions, sliced on the bias 180 g (6 oz) Cucumbers, peeled, seeded, medium dice 120 g (4 oz) Black olives, pitted 1 Red onion, julienne Dressing: 90 ml (3 oz) Orange juice concentrate 60 ml (2 oz) Water 5 ml (1 tsp) Rice vinegar 5 ml (1 tsp) Garlic, chopped 5 ml (1 tsp) Sea salt 5ml (1 tsp) Pepper 10 ml (2 tsp) Fresh Oregano, chopped 90 ml (3 oz) Olive oil 30 ml (1 oz) honey 10 ml (2 tsp) Fresh thyme, chopped Directions: 1. Steam the couscous until tender; set aside to cool 2. Combine the couscous with the vegetables 3. Whisk together all dressing ingredients 4.
