This delicious spin on hummus is a great afternoon snack on a cold day. The slight spiciness combined with a cool drink will help you to forget about the winter outside and transport you to the beaches of Mexico.
This hummus is best served with tortilla chips to help give that authentic feeling or use cut up vegetables and pita chips for a more traditional appeal.
- Makes about 3 cups
1 15-oz. can chilled chickpeas, drained, rinsed
Juice of one large fresh lime
30 ml (2 tblsp) peanut butter (traditionally you would use tahini paste)
3 cloves fresh garlic
30 ml (2 tblsp) jarred jalapeños, drained (or 3 fresh, seeds removed)
30 ml (2 tblsp) olive oil
30 ml (2 tblsp) fresh cilantro leaves
Pinch of cumin, to taste
Red pepper flakes, to taste
Pinch of sea salt, to taste
- Combine all of the ingredients in a food processor until smooth.
